Incredibly tasty - one small suggestion

Hi Jason and team I LOVED the taste of the ham but it was VERY fatty. I know some love ham fat and you need fat for tenderness and flavour but I think the ratio of fat to meat in the half leg I got leant too much towards fat. But then I could be wrong! :-)
